A Really Quick Beef Bourguignons

Serves 4
You will need:
50ml olive oil
2-2 garlic cloves chopped
1 onion chopped
500g diced beef
1 red pepper sliced
250g tomatoes diced
250g mushrooms diced
250ml red wine
1 1/2 beef stock cubes in 350ml water
2 carrots sliced
Worcester sauce- splash
To make this:
Heat the oil in a large frying pan and add the onion and garlic for 5 minutes
Add the beef and brown it off
Add the peppers, tomatoes, carrots and red wine and cook for 2 minutes
Add the stock and Worcester sauce and cook for a further 2 minutes
Add the mushrooms
Bring to the boil, then simmer on low for 40 minutes uncovered
Cover and continue to cook for 20 minutes
Serve with mash or rice
