Aioli

You will need:

2 x medium egg yolks

1 x tsp Dijon mustard

2 x cloves garlic crushed

250ml sunflower oil

1 x tsp lemon juice


To make this:

In a bowl, whisk together the eggs, garlic, lemon juice, mustard and a little salt

Put this into a food processor and very slowly add the oil. Firstly a few drops at a time and then a slow constant stream

When it has thickened, place in the fridge

When ready to eat, bring to room temperature
