Rice Pudding

You will need:
125g Butter
150g Pudding rice
100g Caster sugar
1 tsp cinnamon
1 tsp Vanilla extract
450ml Jersey milk
200g Clotted cream
300ml Double Cream
Sprinkle of demerera sugar
To make this:
Heat the oven to 200 degrees
Melt half the butter in a large pan over a medium heat
Toss the rice in and stir to cover
Pop the sugar and cinnamon in
Add the vanilla extract and a pinch of salt
Then add the milk and creams
Add the other half of the butter once this has thickened
Transfer to a baking dish and bake for 15 minutes
Top with demerera sugar and either grill or use a blow torch safely
