Turkey Forestiere

You will need:
30g Porcini mushrooms
2 tbsp sunflower oil
4 turkey breasts
1 onion sliced
2 cloves of garlic chopped
250g chestnut mushrooms
100ml marsala wine
150ml double cream
Handful of parsley
To make this:
Place the porcini mushrooms in a cup and add 100ml boiling water- Leave to stand
Heat half of the oil in a large frying pan
Season the turkey with black pepper and fry for 10 minutes
Stand the turkey to one side
Add the onion to the pan and fry for 5 minutes
Add the chestnut mushrooms and garlic
Add the drained porcini mushrooms but keep the water!
Cook for 5 minutes
Pour in the wine and the mushroom water
Bring to the boil, then simmer for 5 minutes
Pour in the cream and stir to the boil
Add the turkey back in
Add the parsley and cover, simmering for 10 minutes
Serve with new potatoes and green beans
