Chicken Cacciatora

* This should be marinaded overnight*
Serves 4
You will need:
1kg chicken breast
2 sprigs rosemary
1/2 bottle of chianti
Extra virgin olive oil
Handful of stoned olives
8 bay leaves
3 cloves of garlic- 1 crushed and 2 sliced
Plain flour
6 anchovy fillets
2 tins of good quality chopped tomatoes
Salt and pepper
To make this:
Season the chicken in a large bowl
Add the bay leaves, rosemary,1 crushed clove of garlic and the wine
Mix well and leave to marinade
Pre-heat the oven to 180 celcius
Drain the chicken and keep the marinade
Pat the chicken dry and flour the chicken
Heat an oven proof pan, add a splash of oil and fry the chicken till browned
Place to one side
Place the 2 sliced garlic cloves, anchovies, olives, tomatoes and chicken with the marinade liquid into the pan
Bring to the boil, cover with a lid or foil and bake for 1 1/2 hours
