Grainy Mustard Chicken

Serves 2


You will need:

200g new potatoes

150g green beans

1 tsp olive oil

2 x chicken breasts chopped into chunks

1 tbsp wholegrain mustard

1 tsp balsamic vinegar

Salt and pepper

250ml chicken stock

1 tsp corn flour

1tsp honey


To make this:

Boil the potatoes for about 12-15 minutes in a large pan

Add the green beans 3 minutes before the end

Keep these warm


Heat the oil in a large pan

Season the chicken and add to the pan for 15 minutes

Pour in the stock and once simmering add the cornflour

Simmer for 5 minutes then add the mustard, honey and balsamic


Add the potatoes and beans and cook through for 3 minutes

Serve with rice
