Mango Chicken

You will need:

2 x chicken breasts cut in half length ways

1/2 tsp fresh rosemary

1/2 tsp chopped fresh thyme

1 tsp olive oil

100g fresh mango chopped into small pieces

2 tsp brown sugar

1 tbsp red wine vinegar

1 tbsp dry sherry

1 small thumb size piece of ginger


To make this:

Rub the chicken with salt and pepper and herbs


Heat the oil, add the chicken and cook for around 8 minutes each side

Remove from the pan


In the same pan, add the mango and fry for 2 minutes, then add the sugar, vinegar, sherry and ginger.

Stir well for 2 minutes

Pour over the chicken and serve


Serve with rice
