Bean Enchilladas

Prep 15 mins Cook 40 mins Serves 3/4
You will need:
1 tbsp oil
230g tin of chopped tomatoes
7 spring onions- chopped
Pinch of sugar
1 clove of garlic
4 tortillas
1 red pepper- chopped
1 red chilli- chopped
75g mature cheddar
150ml soured cream
420g can of mixed beans- drained and rinsed
To make this:
Heat the oven to 200 celsius and lightly grease a 2ltr baking dish
Heat the oil in a large pan
Add the chopped spring onions, red pepper and chilli
Fry for 3-4 minutes
Stir in the beans, chopped tomatoes and sugar
Bring to the boil, simmer for 6 minutes and season well
Divide into tortillas adding a little cheese to each(not all the cheese)
Roll them up, tucking in the sides and place them side by side in the baking dish
Pour over the soured cream and remaining cheese and more if you like!
Cover with foil and cook for 10 minutes
Remove the foil and cook for a further 15-20 minutes
Enjoy!
