Scampi or Crayfish in Tomato Sauce

Serves 3


You will need:

1 onion

2 garlic cloves

3 tbsp olive oil

1 tin of chopped tomatoes

2 tbsp flat leaf parsley

1/4 tsp sugar

4 tbsps white wine

Salt and pepper

450g scampi or crayfish


To make this:

Chop the onion and garlic

Heat the oil in a large pan and fry the onion and garlic for 2 minutes

Add the tomatoes, parsley, sugar and wine

Season well

Simmer for 10 minutes then stir in the seafood

Simmer for a further 6 minutes

Season again

Garnish with parsley and serve with crusty bread
