Gammon and Potato Stir Fry

Serves 4
You will need:
2 large baking potatoes
2 apples
2 leeks
2 tbsp rosemary
2 tbsp white wine
Salt and pepper
4 gammon steaks
1 garlic clove
5 tbsp vegetable oil
1 tbsp clear honey
4 tbsp vegetable stock
To make this:
Peel and dice the potatoes and place in boiling water for 5 minutes. Drain
Meanwhile, trim the steaks and cut into small pieces
Core the apples, peel and chop
Chop the garlic
Finely slice the leeks
Heat 3 tbsp oil, fry the potatoes in 2 batches for 5-6 minutes and keep warm in a dish
Add the remaining oil and stir fry the gammon for 5 minutes
Drain the fat
Add the apples for 3 minutes
Add the garlic, leeks and rosemary to the pan and fry for 4 minutes
Stir in the honey, wine and stock
Season well
Return the potatoes to the pan and heat through
Serve and enjoy!
