Chorizo Tortilla

Serves 2/3
You will need:
4 x eggs
1 x sausage of chorizo, chopped
Portion of chips
3 x large tomatoes
1 x large shallot
Red wine vinegar
Rocket
30g Parmesan
To make this:
Whisk the eggs with salt and set aside
Slightly tear the chips apart in a bowl and add the chopped chorizo
Add the eggs back in and allow the chips to soak up for a few minutes
Place in a frying pan on a very low heat
Tuck in the edges like an omelette as it begins to cook
After 3/4 minutes turn it out onto a plate. Turn it over and pop back into the pan for another 3/4 minutes
Meanwhile, slice the tomatoes and cover in vinegar
Slice the shallot and add on top of the tomatoes
Add a handful of rocket on top of that
Place parmesan on top
Serve all together
