Leek and Roquefort Soup

Serves 2/3
You will need:
400g leeks(white only) chopped
60g onion chopped
100g diced potato
600ml chicken stock
60g Roquefort cheese
Olive oil
To make this:
Add the olive oil to a large pan and once warm add the onion, leek and potato for 5 minutes
Add the stock for 5 minutes
Add the cheese for 10 minutes
Add seasoning and blend
