Potato and Leek Soup

Serves 4
You will need:
50g Butter
1 x Garlic chopped
1 x onion chopped
3 x leeks chopped
3 x medium potatoes chopped
900ml chicken stock
Salt and pepper
1 x vegetable stock cube
To make this:
Melt the butter in a large pan and add the garlic and onion for a few minutes
When making the chicken stock, drop the veg cube in
Add all the other ingredients
Simmer for 30 minutes
At the end you can add a little corn flour if it is too thin- To do this mix the corn flour with a little water in a separate bowl to form a paste. Otherwise it will form lumps
Blend and serve
