Smoked Mackerel, Potato and Leeks

Serves 4
You will need:
4 smoked mackerel fillets torn apart
2 x medium leeks cut into 5cm slices
275ml single cream
200ml milk
1 tbsp wholegrain mustard
450g potatoes sliced thinly
Butter
Salt and pepper
To make this:
Heat the oven to 210 degrees
Butter an ovenproof dish
Place a layer of potatoes, then leeks then mackerel
Finishing with a layer of potatoes
Mix together the cream, milk and mustard
Gently pour over the fish
Cover with foil and bake for 40 minutes
Then uncover for a further 10 minutes
