Thai Salmon Parcels

Serves 2
You will need:
100g rice per person- Microwave rice is good
2tbsp red thai curry paste
4 tbsp coconut milk
2 tsp fish sauce
50g sugar snap peas
50g baby sweet corn
2 fillets of fresh salmon
1 lime juiced
1 thinly sliced spring onion
Handful of fresh coriander
To make this:
Heat the oven to 200 degrees
Place the curry paste, coconut milk and fish sauce in a bowl and mix well
Cut 2 rectangles of baking paper 18cm x 10cm. Place these in the middle of two pieces of foil 30cm long
Spread the corn and peas over the two pieces of paper, about the size of the salmon
Then place the salmon on top and pour over the mix
Scrunch up the foil to make a parcel leaving a small gap for steam and bake for 15 minutes

Open and squeeze over the lime juice
Scatter spring onion and coriander over and serve with rice
