Tomato Soup

Serves 3
You will need:
Sundried tomatoes x 6 in oil
2 x garlic crushed
3 x 400g chopped tomatoes tinned
500ml vegetable stock
1 tbsp caster sugar
150ml milk
150ml double cream
3-4 tbsp pesto
Salt and pepper
To make this:
Place a large pan over a medium heat and add a tablespoon of the tomato oil
Add the garlic and stir for 30 seconds
Tip in all of the tomatoes, add the stock and sugar and bring to the boil stirring all the while
Season and cover
Simmer for 10 minutes
Remove from the heat and blend
Stir in the milk and cream and check the seasoning
Add a little pesto to the top and serve
